I love appetizers. You could say that appetizer are my friend. I would much rather graze on appetizers than actually have a plated meal prepared for me. That is probably why I struggle with my weight. Since I prefer to have bite size items to eat and pick at finger foods, it becomes a little more difficult to measure what I eat.
In the fall season and we are always looking for new, unique and great ideas to enjoy and share with our family that would be perfect for the season. Here is a favorite pumpkin fritter appetizer recipe that I have found and enjoy immensely.
This recipe should take you approximately 15 minutes to prepare and will likely yield 24 servings. Each serviing will have 350 calories.
- 1 cup of pumpkin puree
- 1 egg, lightly beaten
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon curry powder
- 1 teaspoon salt
- 4 cups vegetable oil for frying
In a mixing bowl, combine the pumpkin, egg, flour, baking powder, curry powder, and salt. Blend until smooth.
Heat oil in a deep saucepan to 325 degrees F (165 degrees C). (You can also use a deep fryer if available); Drop batter by spoonful into hot oil. Fry until golden brown, approximately 2 minutes. Remove with a slotted spoon, and serve immediately.
